My start was in the kitchen after graduating from the CIA (Please, no comments on attitude of CIA grads. We're not all like that.) Work on the line was fun but I realized FOH is where I'm my best.
I love to let my guests forget about their real world while they're in my restaurant. When they walk in the door they are mine for the duration of the meal. I love attending to any of their wishes and will make it happen if at all possible. Even if I have to trick the kitchen into cooperating ;)
